This Steak Au Poivre is Kolikof's version of one of my favorite dishes in New York. Our Dinner for 4 comes with 4 savoury New York Steaks, our Echire French Butter, Sea Salt Flakes, Creme Fraiche, and the star of the recipe the Kampot Peppercorns.

The Dinner for 4 Comes with:

    • 4 NY Steaks:
      • 2 Olive Wagyu NY Strip Sirloin Steaks (8oz) &
      • 2 Australian Wagyu BMS 8-9 NY Strip Steaks (10oz.)
    • Echire AOC French Salted Butter
    • Sea Salt Flakes
    • Kampot Peppercorns
    • Creme Fraiche

Our Recipe:

  1. Season steaks well, on both sides, with sea salt. Lay peppercorns on flat surface and press each side of steaks to layer the steaks.
  2. Heat Au Poivre sauce on low/medium heat.  
  3. Heat saute pan to medium, add 1 oz oil of your choice and place steaks in pan with 1 oz of butter
  4. Cook 3 minutes on each side for Medium/Rare
  5. Plate the steaks and pour sauce over steaks
  6. Serve with your choice of side dish. (we really love french fries!)

Our Steak au Poivre Sauce:
1. Cook steak to your taste, then remove and rest while you make the sauce;
2. Make sauce: In the same pan, add brandy or cognac, simmer rapidly for 1 minute until the alcohol smell is gone;
3. Add beef broth/stock, and simmer rapidly until it reduces by half (intensifies the flavour);
4. Stir through cream and crushed peppercorns. Serve over steak!
