Our premium Parmigiano-Reggiano has been aged for over two-years and comes directly from the milk of rare Italian Red Cows. This is not just regular "parmesan," but true Italian Parmigiano-Reggiano.

Crack it in half, lean in close, and discover notes of toasted chestnuts, sweet grass, and green tea. Every bite offers an intense hit of umami with surprising crackles from its savory quartz-shaped protein crystals. Our Red Cow Parmigiano-Reggiano is aged for a minimum of 24 months compared to 12 months for other brands. Our distinct two-year aging process is the key to the bursts of zing you will savor in every bite.

BEHIND THE PRODUCT: Red Cows are a prized Italian breed of cows that were once near extinction. Originating from Hungary, Vacche Rosse produce extremely rich milk with a high-fat content. The proteins present in the milk allow for longer aging and permit better digestibility. The only ingredients are raw cow’s milk (grass-fed or hay-fed), salt, and calf's rennet.

SERVING SUGGESTIONS: To fully appreciate its subtle notes, slice in cubes by gently pressing a pointed cheese knife to gently pry a piece from the wedge. Serve as-is on a cheese board and enjoy with Mike’s Hot Honey or balsamic vinegar. Grate atop a steaming plate of tagliatelle, or shave onto a refreshing arugula salad with a simple lemon vinaigrette.
