- 1 (8-bone) rack of lamb, trimmed
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 garlic cloves, minced
Instructions:
- Preheat the oven to 400°F.
- In a small bowl, mix together the olive oil, rosemary, thyme, salt, pepper, and garlic.
- Rub the mixture all over the lamb rack, making sure to coat it evenly.
- Heat a large skillet over high heat. Add the lamb rack, fat side down, and sear for 2-3 minutes until the fat is golden brown and crisp.
- Turn the lamb rack over and sear the other side for 2-3 minutes.
- Transfer the lamb rack to a baking sheet and roast in the oven for 15-20 minutes, until the internal temperature reaches 130-135°F for medium-rare.
- Remove the lamb from the oven and let it rest for 5-10 minutes before slicing and serving.
