Ingredients:
- 4 wild Alaskan halibut fillets
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving
Instructions:
-
Season the halibut fillets with salt and pepper, then lightly dredge them in flour, shaking off any excess.
-
Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the halibut fillets and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the halibut from the pan and transfer to a plate.
-
Reduce the heat to medium-low and add the remaining 2 tablespoons of butter to the skillet. Add the garlic and sauté for 1-2 minutes, or until fragrant.
-
Pour in the white wine and lemon juice, scraping any browned bits from the bottom of the pan. Simmer for 3-4 minutes, or until the sauce has thickened slightly.
-
Stir in the chopped parsley, then pour the sauce over the halibut fillets. Serve with lemon wedges on the side.
