The dairy in Echire, France is one of the last knowns to still use teak wood churns to craft their uniquely flavored, lightly salted (demi-sel), silky-textured butter. BEHIND THE PRODUCT: Since 1979, Échiré Beurre de Baratte – or "churned butter" has the elite designation of Appellation d’Origine Contrôlée, or AOC. This designation protects the style, ingredients, and origin of a product from being produced in other regions. The AOC seal most certainly speaks of authenticity.
SERVING SUGGESTIONS: Pastry chefs have dubbed Échiré French butter as the "king of puff pastry," and "the cream of butters." They tout it makes their pastries and cakes extra light and flaky.
