BEHIND THE PRODUCT: Red Cows are a prized Italian breed of cows that were once near extinction. Originating from Hungary, Vacche Rosse produces extremely rich milk with a high-fat content. The proteins present in the milk allow for longer aging and permit better digestibility. The only ingredients are raw cow’s milk (grass-fed or hay-fed), salt, and calf's rennet.
SERVING SUGGESTIONS: To fully appreciate its subtle notes, slice in cubes by gently pressing a pointed cheese knife to gently pry a piece from the wedge. Serve as-is on a cheese board and enjoy with the Mike’s Hot Honey or balsamic vinegar.
