This Chateaubriand is Kolikof's version of one of my favorite dishes in Las Vegas. Our Dinner for 4 comes with 1 2lb savoury Chateaubriand, 4 Escargots or 4 Duck Confit, and a complimentary 4 Valrhona Chocolate Molten Lava cakes. 


The Dinner for 4 Comes with:

    • 1 2lb. savoury Chateaubriand
    • 4 Escargots
    • 4 Duck Confit
    • Complimentary: 4 Valrhona Chocolate Molten Lava cakes

Our Recipe:

Trim and cut beef tenderloin steak (350-500g) so only the center remains.

At room temperature, season with salt, pepper and olive oil.

Place on pan for 5-10 seconds on each side, then reduce the heat for another 4-5 minutes.

Serve with either bearnaise sauce and potatoes. 

For Bearnaise sauce:

Place 28g of shallots, 55g tarragon, 85g chervil, pepper, salt and 4 tbsp of vinegar into pan and reduce the vinegar by 2/3.  

Remove from pan, and add 5 egg yolks.

On a low heat gradually combine with 170g of butter.
